What started off as a curious experiment has become one of favorite and tastiest elixirs!! We created a syrup of fresh peaches, infused it with Mimosa flowers (Albizia julibrissin), an amazingly uplifting herb used in Chinese medicine, added a touch of fresh ginger at the end, then preserved it with organic cane sugar. Which makes it our first elixir not to use honey.

We added brandy at the end to make it shelf stable, but also have an alcohol-free version available on request where we added more sugar instead of brandy. The alcohol-free version we keep refrigerated and recommend you do the same - our standard sugar and brandy elixir is shelf stable for a couple of years.

We only have what we have until this is sold out, then it’s gone! But it is pretty popular so looks like we will end up making more.

We have been using it in mocktails (with flavored seltzer water like La Croix) or in cocktails (seltzer with some bourbon and a splash of bitters) but it also just tastes great straight. Let us know if you think we should keep it around. :-)
